Oyster Mushroom

Latin name: Pleurotus ostreatus

The Oyster Mushroom is a large fungus that has a distinctive fan or oyster shaped cap. They are variable in colour from beige to deep blue-grey. The gills and stem are white or cream in colour. The stem is woolly at the base, tapering towards the base.

They can be seen in summer, autumn and early winter and are found on dying or dead standing deciduous trees, like beech and oak. Sometimes they can be seen on fallen trunks and large branches.

They have a scent that is often described as sweet, like anise or liquorice.

Widespread and very common in Britain.
